Turkey Bolognese
The family dinner that quietly delivers 40g of protein a bowl. Use the pasta of your choice; it works with whatever your family already loves.

Build the base
Heat the oil over medium and cook onion and carrot for 6–8 minutes until soft and sweet. Add garlic for a final minute.

Brown the turkey
Turn the heat up, add the turkey and break it apart. Cook until no longer pink and starting to catch on the bottom of the pan — that browning is the flavour.

Simmer
Stir in tomato paste and cook one minute, then add crushed tomatoes, oregano, salt and pepper. Simmer uncovered 20 minutes, stirring now and then.

Cook the pasta and serve
Cook the pasta of your choice to just al dente, reserving a splash of the water. Toss with the sauce, loosen with pasta water, and finish with parmesan and basil.

Doubles beautifully. Freeze half the sauce flat in a bag and you have a twelve-minute dinner waiting for the week you need it.
